Tanahmera's Creamy Loaded Scalloped Potatoes

NOTE: Must LOVE Cheese, Bacon, Onion & Mushrooms ;)

Ingredients
6 Yellow or Sweet Potatoes (medium sized, peeled & sliced thin)
2 1/2 Cups Old Cheddar Cheese grated
3 Tbsp Butter/Margerine
1/4 Cup Flour (all purpose)
2 1/2 Cups Milk
1 Tbsp Sour Cream
1 Onion (medium sized sliced & chopped fine)
12 portabello Mushrooms (sliced thin & chopped) or 
1/2 can of mushroom slices drained & chopped
12 Strips of Bacon chopped
1 Tsp each: chives, dill, parsley, salt & pepper

Directions
1. Make the sauce in a saucepan over low heat as follows: Melt butter, add sour cream, flour, spices & milk, bring to a boil for 1 minute, stir in 2 cups of the cheese. remove from heat.

2 In a large casserole dish, combine potato slices, bacon, onion & mushrooms. mix as evenly as possible without breaking the potatoes.

3. Pour sauce made in step 1 over the potato mixture in casserole dish. Top with remaining 1/2 cup of cheese. Cover with Tin Foil (shiny side down;)
4 Bake in oven at 375 degrees F for about 45-60 min (depending on how old your oven is) or until all ingredients are cooked. remove cover and lightly brown top (do NOT stir).

5 Remove from heat, let sit 10-20 min to cool a bit. serve!

Makes 6 servings.

My Turkey & Sweet Potato Shepherds Pie Recipe

Shepherds Pie Ingredients:
2-4 Cups Left over pre-roasted Turkey from your holiday dinner.
3-4 Pre-cooked Sweet Potatoes
1 can creamed corn
2 Tbsp salted Butter

Topping:
1/2 cup Montarey Jack Cheese
1/2 Cup Old Cheddar Cheese
1/4 Cup Chopped Green Onion

Directions:
1. Preheat oven to 350 degrees. 
2. Butter casserole dish, put the turkey scraps at bottom, pack with hands like meatloaf.
3. Spread 1 can cream corn over meat.
4. Remove skin from pre-cooked sweet potatoes, spread on top with fork. 
5. Top with butter. Cover casserole dish with tinfoil. Bake at 350 degrees (covered) for an hour. 
6. Grate montaray jack and old cheddar in a seperate dish and put in fridge for later. 
7. When the shepherds pie is fully baked. Remove from oven, Uncover & Sprinkle top with grated cheeses and chopped green onions. Put it back in the oven uncovered, until cheese melts evenly. 
8. Remove from oven. Let sit 5-10 mins to set. Section & serve.

Ingredients:
1 lb lean (at least 80%) ground beef
1/4 cup chopped onion
1/4 cup plain bread crumbs
1/2 teaspoon dried sage leaves
1/2 teaspoon salt
1 egg
1 package (1 lb 8 oz) refrigerated garlic mashed potatoes (or your own recipe)
1 cup shredded Cheddar cheese (4 oz)
1/4 cup chopped fresh tomato, if desired
2 slices precooked bacon, chopped, if desired
2 medium green onions, chopped (2 tablespoons), if desired

Instructions:
Heat oven to 350°F. In large bowl, mix beef, onion, bread crumbs, sage, salt and egg until well blended. Press in bottom of ungreased 8-inch square (2-quart)
glass baking dish. Spread mashed potatoes evenly over top. Sprinkle evenly with cheese.

Bake uncovered about 50 minutes. Sprinkle with tomato, bacon and green onions. ENJOY

SLICED BAKED POTATOES

Preheat oven to 400 degrees (Can also do in Microwave for 6 plus minutes)
Brush both side of potato slices with butter; place them on a cookie sheet. 
Bake in the preheated 400 degrees F oven for 30 to 40 minutes 
or until lightly browned on both sides, turning once.
When potatoes are ready, top with bacon, cheese, green onion; 
continue baking until the cheese has melted;
Add a dollop of sour cream when done and enjoy!!

Ingredients
* 4 small sweet potatoes (1-3/4 lb./800 g), washed
* 1/4 cup PHILADELPHIA Light Cream Cheese Spread
* 1 Tbsp. chopped fresh chives

Instructions
1. PIERCE potatoes. Microwave on HIGH 5 to 7 min. or until tender, turning over after 3 min.
2. CUT potatoes in half; top with cream cheese spread.
3. SPRINKLE with chives & pre-cooked bacon.

Serves: Makes 4 servings, one potato (200 g) each.
Prep: 5 min.
Total: 12 min.
Use Your Oven:
For crisper skins, bake potatoes at 375ºF for 30 min. or until tender instead of microwaving.

Serving Suggestion:
Serve with a mixed green salad tossed with your favourite Kraft Dressing.

Ingredients
* 1-1/2 lb. (675 g) new potatoes (about 6), peeled, cut into chunks
* 1/3 cup PHILADELPHIA Light Chive and Onion Cream Cheese Spread

Instructions
1. COOK potatoes in boiling water in large saucepan 20 min. or until tender.
2. DRAIN potatoes well; return to saucepan. Add cream cheese spread; mash with potato masher until light and fluffy.

Serves: Makes 6 servings, 1/2 cup (125 mL) each.
Prep: 10 min.
Total: 30 min.
How to Make Potatoes Fluffier:
Use electric mixer to mash potatoes and gradually add 1/4 cup milk to the mashed potatoes, beating constantly until well blended.

Turkey & Sweet Potato Shepherd's Pie 
A twist on the shepherds pie. AHHHHHHHHH Sweet Comfort food! This is made with sweet potatoes and ground turkey and a good hint of curry!Good to make with your leftover Thanksgiving sweet potatoes and turkey. You can even put a layer of stuffing in, top with some pecans.....

Meat Filling:
1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
4 sage leaves, chopped
1-2 teaspoon curry powder
1/2 cup buttermilk
1 tablespoon flour
1 1/2 lbs ground turkey
1 cup frozen peas

Sweet Mashed Potato Topping:
2 lbs sweet potatoes, peeled and diced
1 tablespoon honey
1/2 cup buttermilk
2 tablespoon butter
1/4 teaspoon cinnamon
salt and pepper

Directions:
1. Boil sweet potatoes till tender add honey, buttermik, butter,cinnamon, salt and pepper to taste.
2. Mashing till smooth.
3. Set aside.
4. Saute in oil the onions, garlic, and turkey till just under done.
5. Add curry, salt, pepper, sage, sprinkle flour over turkey mix and pour in the milk.
6. Add the peas.
7. In a butter 8x8 casserole pan lay meat mixture then place potatoes over meat covering all to seal.
8. Top with dabs of butter.
9. Bake in a 350 degree oven for 15-20 minutes just to slightly brown top.

4-6 servings

Greek Potato Skins

You can do most of this recipe ahead, have your skins ready and baked the first 5 minute baking and have your cheese mixture ready and in the fridge. Continue on to the last steps just before serving. These go over well with sports fans, however I think you'll want to make more than 32!

Ingredients:
3 medium potatoes, scrubbed
olive oil
4 ounces feta cheese, crumbled
1 1/2 teaspoons oregano
1/2 teaspoon basil
1/4 teaspoon rosemary
1/2 teaspoon garlic salt

Directions:
1. Heat oven 400f, prick the potatoes and bake 1 hour or until done.
2. Cool potatoes slightly, cut in half, lengthwise and scoop out the pulp leaving a 1/4" shell (reserve pulp for another use) Cut skins in half lengthwise again and then cut in half crosswise (you'll have 32 pieces) Brush skins generously with with oil.
3. Bake 5 minutes.
4. Combine the remaining ingredients and top the skins with the cheese mixture.
5. Drizzle with a little oil and broil for 2-3 minutes until cheese is bubbly.

yeild: 32 skins
