Old Fashioned Chicken In A Biskit Casserole
Ingredients:
3 - 4 chicken breasts, boiled and cubed
2 cans cream of chicken soup
1 small onion - chopped
2/3 C. chopped celery
2 C. cooked rice
1 C. Mayo
1 Box Nabisco Chicken in a Biskit crackers

Preparation:
Sauté celery and onion in margarine. 
Combine all ingredients except crackers. 
 Pour into 9 x 13 dish. 
Crush crackers, and top casserole with them. 
 Bake @ 350 about 20 mins - or until crackers are slightly browned. 
Note: Do not add salt to this one. The crackers, and soup are plenty!

Vegetable Chicken & Egg Noodle Casserole
Serves - 12 To 14

Ingredients:
2 Cups cubed cooked chicken breast
1 Can Cream of Chicken soup
1 can cream of broccoli soup
1-1/2 c. milk
1 c. grated parmesan cheese, divided
3 garlic cloves, minced
2 Tbsp. parsley flakes
1/2 tsp pepper
1/4 ttsp salt
1 package (16 oz.) wide egg noodles, cooked and drained
1 package (16oz) frozen broccoli, cauliflower and carrot blend, thawed
2 c. frozen corn, thawed

Preparation:
Pre-cook chicken breast & cut into cubes.
Combine soups, milk, 3/4 c. parmesan cheese, garlic, parsley, pepper and salt; mix well. 
Add noodles, chicken and vegetables; mix well. 
Pour into a greased 13x9x2 inch pan. 
Sprinkle with the remaining cheese. 
Cover and bake 350 degrees for 45-50 min. or until heated through.

Best Butter Chicken
Butter Chicken is one of the recipes most frequently requested of me. It’s one I make fairly often, so I don’t know why it’s taken me so long to post it!

This restaurant favourite is creamy, flavourful and mild on the spectrum of Indian curries. My version is simplified (read: doesn’t require a plethora of spices that you’ll buy and only need one-eighth of a teaspoon of) but doesn’t suffer in the flavour department. This is definitely a lick-your-plate dinner.
Most butter chicken recipes require cooking the chicken separately first, then simmering in the sauce. I don’t think this extra cooking step is necessarily crucial, especially for the sake of an easy weeknight dinner. The marinade, however, is important because the chicken breasts don’t take long to cook, so they won’t absorb much of the flavour from the sauce. If you are a planner, marinate the chicken overnight for maximum benefit (but even a half-hour to mingle with the spices will make a difference). And if you are a planner AND a perfectionist, then feel free to add an extra step and char the chicken cubes a bit on a grill/grill pan, or under a broiler for a few minutes before tossing them in the sauce.

One thing you don’t want to rush is the caramelizing of the onions – it’s a really important layer of flavour in any Indian curry, and especially in a sweeter one like this.

Ingredients
For chicken & marinade:

    2.2 lbs (1 kg) boneless, skinless chicken breast cut in 1" - 2" cubes
    2 tbsp lemon juice
    2 cloves garlic, minced
    1 tbsp garam masala
    1 tsp kosher salt

For sauce:
    ¼ cup vegetable oil
    2 ½ cups chopped onion (about 2 medium-large)
    2 tbsp coarsely chopped garlic
    2 tbsp garam masala
    2 tsp paprika
    ¼ tsp cinnamon
    2 tsp kosher salt, or to taste
    2 cups diced no-salt-added canned tomatoes
    ¾ cup cream
    2 tbsp butter
    Chopped cilantro, to garnish (optional)

Instructions
For marinade:

    Combine all ingredients in a zip-top bag or shallow baking dish, massaging the marinade into the chicken. Let stand at room temperature while you prepare the sauce, or marinate in the fridge overnight.

For sauce:
    Heat oil over medium heat in a large saucepan or dutch oven. Add onions and slowly cook until golden, about 20 minutes, reducing heat if they are getting crispy or browning quickly.
    Add garlic and cook until fragrant, about 1 minute. Stir in garam masala, paprika, cinnamon and salt; cook 1 minute more. Add tomatoes; cook 2 minutes, then add cream and carefully puree using an immersion blender (or standing blender, but do it in batches or the steam will blow the top off).
    Return sauce to saucepan and bring to a simmer. Add chicken to the sauce, cover, and simmer over medium-low heat until cooked through, about 12 minutes (remove a couple of pieces to make sure they are no longer pink inside). A gentle simmer is required to gently cook the breasts so they don't become tough, and you don't want to overcook them.
    Stir in butter, taste and add more salt to taste. Serve sprinkled with cilantro, if desired.

* 2 cups penne pasta, uncooked
* 1 lb. (450 g) boneless skinless chicken breasts, cut into bite-size pieces
* 1 tsp. oil
* 1 red pepper, finely chopped
* 1/2 cup (1/2 of 250-g tub) PHILADELPHIA Light Cream Cheese Spread
* 1/2 cup milk
* 2 Tbsp. KRAFT 100% Parmesan Grated Cheese
* 2 Tbsp. sliced stuffed green olives
* 2 tsp. dried rosemary leaves

Instructions
1. COOK pasta as directed on package.
2. MEANWHILE, cook and stir chicken in hot oil in large skillet on medium heat 5 min. or until chicken is cooked through, stirring frequently. Add remaining ingredients; cook 5 min. or until cream cheese spread is completely melted and mixture is well blended.
3. DRAIN pasta. Add to skillet; mix lightly.

Serves: Makes 4 servings, 1-1/2 cups (375 mL) each.
Prep: 15 min.
Total: 25 min.
Cooking Know-How:
Set the water on the stove as soon as you walk in the door. By the time you are ready to start cooking, the water should be boiling.

Substitute:
Substitute 2 Tbsp. chopped fresh rosemary for the dried rosemary.

"Use the olive oil from a jar of sun-dried tomatoes to saute chicken, garlic, basil and oregano. Cook the fragrant mixture briefly with the tomatoes, then serve it up with hot pasta and a grating of Parmesan cheese. This is an easy-to-prepare, wonderful, flavorful pasta dish that gets rave revues! I have had many friends ask me for this recipe. After my friends prepared this dish for their friends, their friends would ask my friends for it. Goes well with a crisp, green salad and garlic bread."

INGREDIENTS
* 16 ounces rotini pasta
* 4 skinless, boneless chicken breast halves, cut into bite size pieces
* 4 tablespoons olive oil
* 3 cloves garlic, minced
* 1 1/4 teaspoons salt
* 1 1/4 teaspoons garlic powder
* 1 1/4 teaspoons dried basil
* 1 1/4 teaspoons dried oregano
* 1 cup chopped sun-dried tomatoes
* 1/4 cup grated Parmesan cheese

DIRECTIONS
1. Cook and drain pasta as directed.
2. While pasta is cooking, in a 5-quart pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked. Add sun-dried tomatoes and cook for two minutes.
3. Remove from heat and toss with pasta. Serve with grated Parmesan cheese if desired.

Mushroom & Chicken Fajitas Flatout Wrap

1 Flatout® Light Flatbread
1/2 tsp olive oil
4 oz fresh white button mushrooms, sliced
1 Tbs onion, diced
1/2 cup cooked chicken, shredded
1 tsp salsa

In large skillet, heat olive oil over med-high heat. Add mushrooms and onions. Saute until mushroom liquid has evaporated, about 5 minutes. Divide salsa over each Flatout. Layer chicken, mushrooms and onions at one rounded end of Flatout. Roll, cut and enjoy!

Ingredients:
Ritz Crackers
Veggie Thins
Montreal Chicken Spice
Bread Crumbs

Other Items:
Large Ziplock Freezer Bag
Roling Pin

Directions:
Put veggie thins & ritz crackers In the bag.
Seal The bag & remove all of the air.
Lay bag on a flat surface & crush the crackers with the rolling pin.
Add Montreal Chicken spice & bread crumbs.
Re-seal bag with air in it & shake until all ingredients are evenly mixed.
Make a huge batch & store in an extra large freezer bag or air tight container with lid.
Use as needed as shake & bake for meats, potatoes, etc.

Store in bulk, just seperate amount needed for each dish.
DO NOT RE-USE!!!
If it has touched meat, eggs, or vegetables, toss the remainder to prevent food poisoning.

I will be adding to this shortly I have Tons Of Soup Recipes, Especially the Cream of whatever kind, If it can be cooked, I've creamed it lol (get your head out of the gutter) & frozen it for times I'm too tired or busy to cook;) I just dump it (frozen) in the crock pot, & go about my business so its ready by dinner time.

Tanahmera's Cream Of Curried Chicken, Mushroom & Leek Soup Recipe:

It sounds scary but tastes excellent...

1 Cup of (Powdered) Cream Of Mushroom Soup Base
1 Cup of Cream of Leek Soup Base
2 Pkg of Chicken flavoring (from Mr. Noodles/Chinese Noodles)
1 Tbsp Chives
2 Tbsp Curry
1 Tbsp Dill Weed
1 Tbsp Garlic Plus Spice (available in most grocery stores)
1 Tbsp Seasoned Salt
1 Tbsp Tarragon
3 Cups Of Instant Rice
3 Chicken Breasts (boneless skinless & cubed)

Directions:
Boil 4 Cups of Water & 1 Tbsp Milk in a Medium-large sized pot. 
Slowly add the above ingredients mix together well.
Simmer until soup reaches the desired consistency. 
Leftovers are safe to freeze in plastic microwavable containers.
