Day Of The Dead: Easy Oaxacan Mexican Hot Chocolate - Xocolatl

Get cozy with Xocolatl, an authentic Oaxaca Mexican hot chocolate made with real chocolate. It's the ultimate comforting treat! Day Of The Dead-Dia De Los Muertos

Equipment

saucepan

molinillo, an immersion blender, or a whisk

Ingredients

2 cups milk

4 ounces bittersweet chocolate such as Ghirardelli

½ teaspoon ground cinnamon

1 teaspoon vanilla extract

4 tablespoons almond meal  or finely ground almonds

2 tablespoons  sugar  more or less to taste

Instructions

In a saucepan over medium-high heat, add milk, cinnamon, vanilla extract, and sugar - heat until simmering, but don't let the milk boil.

Lower the heat, add the almond meal and chopped chocolate, and whisk gently until the chocolate is completely melted and blended. Give it a taste to check for sweetness and spiciness.

For a smooth and frothy consistency, blend the mixture with a molinillo, a whisk, or an immersion blender.

Pour the Xocolatl directly into mugs. Serve hot (*scroll up to see my serving suggestions).

Notes

Chop your chocolate finely so that it melts evenly.

If you're using milk chocolate, avoid sugar, as the result will be too sweet.

If your drink is too sweet, add a pinch of salt to cut the sweetness.

Don't substitute ground cinnamon for cinnamon sticks because the drink isn't simmered long enough for the sticks to release their flavor. Use the sticks as garnish and for stirring.

For a quick version, use Mexican chocolate disks, like Ibarra, Abuelita, or Mayordomo.

If you're using chocolate disks, you will only need milk or water - it already contains all the other ingredients - but what's the fun in that?

You don't have to froth Xocolatl, but it's traditionally done using molinillo (*scroll up for directions on how to use it). You can also froth it with an immersion blender, frother wand, or a whisk.

Storage:

Store leftovers refrigerated in an airtight container for up up 4 days.

Reheat in a saucepan over medium heat until steaming but not boiling, or in a microwave.

Mexican Hot Chocolate History:

Chocolate has a long historical connection to the dead in Mexico. The Mayans used it to help escort people into the afterlife. When you offered chocolate to the dead, the Mayans thought it would travel with the soul and usher in rebirth. Not only was it believed to provide a link from the living world to the afterlife, but it was enjoyed by mourners of the deceased (via Huff Post).

According to Huff Post, families may leave Mexican hot chocolate out for children for Día de los Angelitos (Day of the Little Angels), which takes place the day before Día de los Muertos. Then, they will drink it again on the Day of the Dead to honor their adult loved ones. Drinking Mexican hot chocolate is especially customary as a part of the evening watch at the cemetery. Some people even pour hot chocolate into the graves.

While Mexican hot chocolate is popular throughout cooler months of the year, it's especially prominent during holiday celebrations like the Day of the Dead. The difference between Mexican hot chocolate and the hot chocolate we drink in the U.S. relates to the type of chocolate in it (often Mexican chocolate) and the addition of spices like cinnamon, nutmeg, and cayenne pepper (via Big 7 Travel).

Stawberry Mead Recipe

How to Make Mead (and What the Heck is it??)

You may have heard some whispers and rumblings about mead lately, as how to make mead has become a bit of a hot topic. But, what is it, anyway? In its simplest form, it’s a fermented alcohol drink made with honey and water, also sometimes called “honey wine” or melomel.

Some historians claim that mead is the oldest form of alcohol created by humans, dating back thousands of years. If people back then could figure out how to make this delicious drink, then we certainly can now, and it doesn’t have to be difficult.

Small Batch Mead Recipe

The best way to start is on a small scale, and a gallon batch of mead is the perfect size for beginners. This mead recipe features fresh strawberries, but you can easily substitute your favorite fresh fruit. Say, blackberries.

You can also use foraged items like linden flowers or blended wildflowers.

Ingredients

Honey — You’ll need about a quart of honey. This is the ingredient that feeds the fermentation process. It may seem like a lot of honey, but the sweetness will be negligible in the finished product.

Champagne yeast — This is a specialized ingredient, for sure. You can also use wine making yeast. You can order it here.

Fresh strawberries — This is what gives this strawberry mead its fruity flavor. You can feel free to substitute other berries here for a different flavor.

Raisins — Opt for organic raisins.

Equipment Needed for a One-Gallon Mead Recipe

If you start looking up how to make mead, you will notice that a lot of the mead recipes seem complicated, requiring fancy equipment. Maybe after a few tries you will want to expand your skills to that level, but this one gallon mead recipe sticks to the basics.

A one-gallon jug with a narrow neck for brewing. I prefer to use glass for this, as I don’t care for plastic, but a plastic jug will work in a pinch.

An airlock with a rubber stopper. You can alternatively use a balloon with a pinhole that is attached to the top of the jug. The gasses will be able to escape through the pinhole without letting any oxygen in. (You can also get the glass jug with airlock together for a better price).

A stainless steel pot

A big spoon

A funnel, bigger is better

A thermometer. Just a regular meat thermometer will do.

Sanitizer, I like One Step brand as it is easy to use and nontoxic. It is very important that you sanitize everything that will be used prior to brewing.

As soon as you add any fruit to mead, it is then called a “melomel,” so that is technically what this recipe is. Feel free to use any fruit you might have on hand, or leave the fruit out completely and just do a straight mead if you’d like. The process is the same either way.

Mead Recipes, but first, for those who don't know....

What Is Mead?
Mead is an alcoholic beverage made by fermenting honey with yeast. Mead is not a beer, wine, or spirit in the normal sense; it is its own class of alcohol, and many people believe it is the oldest of the alcoholic beverages. Mead has held a pivotal place in many cultures throughout its nearly 8,000 year history, and it is still enjoyed throughout the world.

The first meads were most likely made simply by taking honey and water and letting them ferment with the naturally occurring yeasts found in the honey. Evidence of early meads has been found in Egypt and on the island of Crete, and it was drunk in Greece throughout the Golden Age. In many early cultures, bee goddesses held central roles in the pantheon, and many have postulated that this was because of the intoxicating effects of mead harvested from local bee hives.

There are three main classes of mead, with many variations on each. Traditional meads are made using only honey, water, and yeast. Metheglin mead is made in the same way as traditional mead, but has various spices – such as cinnamon or vanilla – added. Melomel mead is similar, but has fruit added as well. Various types of melomel include mead with mulberries, known as morat; mead with pears, known as perry; mead with apple juice, known as cyser; and mead with grapes, known as pyment.

Mead retained its place of honor as a highly valued drink in many cultures until the introduction of wine. As wine became a mark of wealth and prestige, many lords began turning from the consumption of mead to wine. The peasantry continued to enjoy mead, as it could be easily made from ingredients they could get their hands on and didn’t require special storage. Over time, however, beer replaced mead in the lives of the commoners, and mead became a drink set aside for special occasions.

Many people trace the English word honeymoon to a practice of fathers to supply their daughters with enough mead to last a month as a dowry. Drinking this mead throughout the first month of marriage was meant to ensure that the firstborn child would be a male. Other holidays, such as the Yule festivals, also included drinking mead as part of the festivities.

Mead is still a regular part of the Ethiopian tradition, where it is known as tej. Ethiopian mead has the bark of a plant called gesho added to it, giving it a somewhat hoppy taste and making it similar to the beer-like mead known as braggot. Ethiopian mead varies in alcohol content and sweetness, with some being quite potent, and others, such as the variety known as berz, having a low alcohol content.

Wassail is a traditional holiday drink, which has been served for centuries around the time of Yule. It is enjoyed by many people, not just Pagans. It originated from the Norse, and you can actually buy drinking horns online (or make your own) if you want to enjoy Wassail the truly traditional sense. The word comes from the old Norse toast, "Ves Heill," meaning "be in good health." There are several variations of this recipe - here are a few of them.

Wassail Recipe 1:

You will need:
6 cups apple cider
1 cinnamon stick
1/4 tsp nutmeg
1/4 cup honey
3 tbsp lemon juice
2 1/2 cups pineapple juice

Heat cider and cinnamon stick in dutch oven. Simmer for 5 minutes. Add remaining ingredients and simmer 5 minutes longer. Serve. You can also add rum to this recipe (to taste).

Wassail Recipe 2:
Here is another variation on this recipe.

You will need:
2 1/4 cups white sugar
4 cups water
2 cinnamon sticks
1 slice fresh ginger root
4 cups orange juice
2 cups lemon juice
8 cups apple juice
8 whole allspice berries
1 tbsp whole cloves

Combine sugar and water in a large pot (dutch oven). Boil for 5 minutes. Remove from heat and add cinnamon, allspice, ginger and cloves. Cover and let stand for 1 hour. Strain liquid into a large pot. Just before serving, add apple, orange, and lemon juice and bring to boil. Remove from heat and serve. You may add rum to this recipe as well.

Wassail Recipe 3: Alcohol Free
Here is yet another (non-alcoholic) variation on this recipe.
You will need:
2 cups cranberry juice
2/3 cup white sugar
7 cups water
2 cinnamon sticks
1 tbsp whole allspice
1 tbsp whole cloves
2 (20 ounce) cans pineapple juice
6 oz. frozen concentrated fruit punch
1 (6 ounce) can frozen orange juice concentrate

In a large pot over medium heat, combine water, sugar, and cranberry juice. Bring to a boil and stir until the sugar is dissolved. Place the cinnamon, allspice and cloves into a cheesecloth bag and close tightly. Add to the liquid and simmer for 20 minutes. Remove the spices. Just before serving, add the remaining ingredients (juices). Serve steaming hot.

Especially when Winter has moved in, this is a warming and comforting drink. It makes a good amount - perfect for a family after spending a day out in the snow.

You will need:
1/2 cup brown sugar
1 tsp. whole allspice berries
3 cinnamon sticks
1 tsp. whole cloves (about 7-10)
1/4 tsp. salt
dash of nutmeg (preferably fresh grated)
2 quarts apple cider (2.2 L)

Combine all ingredients in a large pot. Bring to a boil; cover and simmer for 20 minutes. Strain to remove the spices and serve. Those of age may wish to add a shot of spiced or dark rum to their cider.

It is also possible to make mulled cider in a large crock pot. Here is a variation suitable for long slow simmering.

You will need:
1/2 cup brown sugar
1 tsp allspice
1 1/2 tsp. cloves
2 sticks cinnamon
1 orange, sliced (with peel)

Combine all ingredients in crock pot. Cover and cook on low for 2-8 hours, until desired flavor is reached. Serve with ladle.

To make the spices easier to remove before serving, tie them into a piece of cheesecloth and remove the cheesecloth pouch before serving. It's easier than having to strain 2L of cider!

Base Recipe
14oz sweetened condensed milk
1 3/4 cup milk or cream (whole, lowfat, skim, almond, soy, heavy cream, half & half etc – whatever your preference, however the more fat, the more creaminess)

Mix the ingredients together well. Add them to a mason jar and shake it like crazy or you could also opt to use an old (washed) creamer container.

French Vanilla Creamer
2 teaspoons vanilla extract OR vanilla coffee syrup

Vanilla Bean Coffee Creamer
2 teaspoons vanilla bean paste

Chocolate
2-3 tablespoons chocolate syrup
(1 tsp vanilla extract, optional)

Chocolate Almond
1 tablespoon cocoa powder
1 teaspoon almond extract

Strudel
1 tablespoon cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract

Vanilla Caramel
2 tablespoons caramel ice cream topping
2 teaspoons vanilla extract

Chocolate Raspberry
2 teaspoons cocoa powder
2 tablespoons raspberry syrup

Irish Cream
2 tablespoons chocolate syrup
1 teaspoon instant coffee
1-2 teaspoons vanilla extract
1 teaspoon almond extract

Coconut
2 teaspoons coconut extract

Samoa (like the Girl Scout Cookies)
2 teaspoons coconut extract
(or sub coconut milk or cream of coconut, heated & strained, for the milk/cream)
2 tablespoons chocolate syrup
2 tablespoons caramel ice cream topping

Peppermint Patty
2 tablespoons chocolate syrup
1 teaspoon peppermint extract

Cinnamon Vanilla
2 teaspoons cinnamon
2 teaspoons vanilla extract

Pumpkin Spice
3 tablespoons pureed pumpkin
1 teaspoon pumpkin pie spice
4 tablespoons maple syrup
1 teaspoon vanilla extract

Honey Vanilla
1/4 cup honey
2 teaspoons vanilla extract

Almond Joy
1-2 teaspoons coconut extract (or sub coconut milk or cream of coconut if you heat it first, strained, in place of the milk & extract)
1 teaspoon almond extract
2 tablespoons chocolate syrup

Sweet Cream
Use 1 3/4 cups of heavy cream instead of the milk in the base recipe
2 teaspoons vanilla extract OR the inside of a vanilla bean, scraped
1 teaspoon almond extract

Chocolate Orange
2 tablespoons chocolate syrup
1-2 teaspoons orange extract

Hazelnut
2 teaspoons hazelnut extract

Chocolate Hazelnut
2 tablespoons chocolate syrup
2 teaspoons hazelnut extract

Cinnamon Cake
2 teaspoons cinnamon
2 teaspoons vanilla extract

Salted Caramel
2-3 tablespoons caramel ice cream topping
1/2 teaspoon salt

Eggnog
Replace milk in base recipe with equal amount of heavy cream
1 teaspoons vanilla extract
2 teaspoons rum extract
1 teaspoon ground nutmeg

Toasted Almond
2 teaspoons almond extract

Directions & Tips:
In all these recipes, anything that has a dry or thick ingredient (like cinnamon, honey, etc..) should be heated up with a small amount of your milk/cream from the base recipe so it can dissolve properly. You don’t want grainy creamer! Then, add the rest of the milk/cream along with the sweetened condensed milk.

If you want really creamy creamer, use heavy cream instead of milk in your base recipe.

You'll want to stick a piece of tape on they mason jar lid with the expiration date from the milk used. Use this as a guideline as to when the creamer should be used by.

Please feel free to play around with amounts of extracts and other ingredients used if you like stronger or less intense flavors!! And, let your imagination turn, and make up your own combinations. Use this as inspiration to create your very own perfect homemade flavored creamer!

 ✿´¯`*•.¸¸✿ Ginger Limeade ✿´¯`*•.¸¸✿
Limeade spiked with ginger juice invigorates the senses on a torrid summer day.

The most refreshing drink I have ever quaffed was freshly squeezed kaffir lime juice over ice. It was at the Singapore Polo Club and the day was so steamy and I was so miserably hot that I almost kissed the white-jacketed steward who came bearing a tray of frosty glasses.

The second most refreshing drink was sweet limeade spiked with peppery ginger juice. It was on a sweltering day in Washington D.C., where the summer miasma easily rivals Singapore’s round-the-clock heat and humidity. (Of course if you live in Singapore, on rainy days everyone wraps up in shawls and complains about the chill.) I staggered into a branch of Teaism, not far from the Mall, drained two glasses of this elixir and had started on my third before I regained my senses.

Ginger limeade is an invigorating summer drink, guaranteed to stir your senses from a heat-induced torpor. If you are making a lot of limeade, run a pound of fresh ginger through a vegetable juicer and within seconds you’ll have a cupful of pale yellow liquid. It will keep in the refrigerator for a day. But if you just want to make a glass or two, it’s simpler to grate some ginger, wrap it in a small square of cheesecloth, and squeeze the juice into a small dish.

I like to sweeten the limeade with thick sugar syrup. I use the recipe in The Joy of Cooking, which calls for two parts white sugar to one part water. This will keep indefinitely in the back of the refrigerator, so make enough to last for a few weeks.

Ginger-Spiked Limeade

To make one glass

Ingredients:
3 tablespoons freshly squeezed lime juice
2 to 3 tablespoons cold sugar syrup (see note)

2 teaspoons ginger juice (see note)
5 to six ounces of cold water
Ice
A sprig of mint for garnish

Other:
1 tall glass
Small square cheesecloth
Microplane grater

Method:

1. Chill a tall glass by rinsing it in water and putting it in the freezer for a few minutes.

2. When the glass is frosty, remove it and fill with ice. Add the lime juice, sugar syrup and ginger juice. Stir. Add cold water to taste. Then taste and adjust the flavors to your liking—you can always add more of any ingredient, or dilute the drink with more water.

3. Add the mint and serve at once.

Note: To make the sugar syrup, combine 1 cup water and 2 cups white granulated sugar in a small saucepan. Stir and boil for 5 minutes. Let cool before using.

To make ginger juice, grate 1 or 2 tablespoons of ginger using a microplane or other grater. Wrap the ginger in a small square of cheesecloth and squeeze the juice into a bowl. One tablespoon of grated ginger will yield 2 to 3 teaspoons of juice, depending on freshness.
