Mom's Best Peanut Brittle

"This is a wonderful peanut brittle that is easy to make and wows everyone! Have all the ingredients for this recipe measured out and ready. This recipe requires that you react quickly. You do not have time to measure ingredients in between steps."

Yield 1 pound

Ingredients

    * 1 cup white sugar
    * 1/2 cup light corn syrup
    * 1/4 teaspoon salt
    * 1/4 cup water
    * 1 cup peanuts
    * 2 tablespoons butter, softened
    * 1 teaspoon baking soda

Directions

1. Grease a large cookie sheet. Set aside.

2. In a heavy 2 quart saucepan, over medium heat, bring to a boil sugar, corn syrup, salt, and water. Stir until sugar is dissolved. Stir in peanuts.

3. Set candy thermometer in place, and continue cooking. Stir frequently until temperature reaches 300 degrees F (150 degrees C), or until a small amount of mixture dropped into very cold water separates into hard and brittle threads.

4. Remove from heat; immediately stir in butter and baking soda; pour at once onto cookie sheet.

5. With 2 forks, lift and pull peanut mixture into rectangle about 14x12 inches.

6. Cool. Snap candy into pieces.

Sunflower Sandwich Snackers 

These whimsical sunflowers are always a huge hit! What my kids don’t know is that each flower contains Vegetables, Dairy, Whole Grain AND a complete serving of Fruit. They’re SO easy and I get bonus points w/ the kids for serving “fun food”. :)

Ingredients:1/4 c. California raisins
2 T. reduced fat cream cheese
1 slice Orowheat sandwich thin (or other brand)
1 ounce sliced cheese
1/3 of a medium green pepper

Directions: Slice cheese into triangles. The best way is to slice it in half one way, then in half the other. 
Then, slice each square into triangles (see below)


Place sandwich thin on plate and spread with cream cheese. Sprinkle raisins on top and set on plate. Slice green pepper into strips. Spread on plate too look like a flower "stem" and "grass". Arrange cheese trianges around sandwich thin and serve.

Tanahmera's Toddler Meatloaf Cupcakes

For kids who refuse to eat "normal" meatloaf!

Ok first allow me to state that this recipe was born of necessity. You see, my toddler, (Marcus), refused to eat my meatloaf, not because it sucks, but because it was lacking in sensory appeal, apparently, (he is very artistic). So if you're a mom with the same problem, try this, it works....

* Make your meatloaf the same way as usual.
* Put it in a muffin pan (without the cupcake papers).
* Ice it with ketchup -optional:)
