Breakfast Burrito Casserole
There is nothing I love more than an easy breakfast recipe. Mornings aren’t always my strong suit, but as a mom, I love a great make-ahead breakfast recipe. That is why I love breakfast casserole recipes that are big enough to feed everyone and quick to put together. This breakfast burrito casserole is definitely my new favorite casserole, and I have been making it all the time. It combines my love for Tex-Mex food with my love for easy breakfast casseroles! Made with sausage, hashbrowns, eggs, tortillas, and plenty of cheese, you will go crazy for this easy breakfast idea. An easy breakfast burrito casserole made with six simple ingredients that your entire family will love. It is cheesy, savory and the perfect way to start your morning off right.

Equipment

medium mixing bowls

Ingredients  
▢1 16 ounce roll breakfast sausage – crumbled and cooked
▢1 20-oz package diced hash browns – (thawed if frozen)
▢2 cups shredded cheddar cheese
▢6 eggs
▢2 cups half-and-half
▢10 flour tortillas
▢½ teaspoon salt
▢½ teaspoon pepper

Instructions 
Gather your ingredients. Preheat oven to 350ºF. Spray a 9×13-inch casserole dish with cooking spray.
Mix sausage, hash browns, and 1 cup of cheddar cheese. Divide the meat, potato, and cheese mixture between tortillas. Roll up each tortilla and place seam side down in the baking dish.
In a bowl, whisk together egg and half-and-half. Pour over tortillas.
Add the remaining 1 cup cheese over top of the egg mixture and cover with foil.
Bake covered for 35-40 minutes. Remove the foil and bake for 5 – 10 more minutes until the cheese has melted. Remove from the oven and allow to sit for 5-10 minutes before serving.

Notes
I like to use breakfast sausage in this recipe, but crumbled, cooked bacon will also be delicious.
Add taco seasoning to your breakfast sausage as it cooks in the skillet. This will add a delicious Tex-Mex flair to your breakfast burritos. Top the whole meal with fresh black bean and corn salsa for an even more authentic meal.
You can easily cut this recipe in half to make five burritos for breakfast for the family. When you make a smaller quantity, use an 8×8 baking dish so that the burritos still cook evenly without getting too crispy.

Breakfast Lasagna

INGREDIENTS
2 cups breakfast sausage, cooked
3 cups scrambled eggs
15 strips bacon, cooked
Butter
1 pound frozen hash browns
Shredded cheddar cheese
Chives, to garnish

INSTRUCTIONS

Preheat oven to 350°F.

Cook the breakfast sausage and set aside.

Cook scrambled eggs; remove when they are still a bit runny and set aside.

Cook bacon and set aside.

Butter a 9x9 baking pan.

Layer hash browns, breakfast sausage, scrambled eggs, cheese, hash browns, bacon, eggs, cheese and end with hash browns.

Bake until hash browns are done, approximately 30 minutes.

Carefully remove from oven, top with more cheddar cheese, and put it under the broiler until the cheese is bubbly.

Serve with chopped chives as garnish.

Ingredients: 
(Note quantities not added. This will vary depending on how many you plan to make. It’s safe to estimate about 2-3 per person.)

White or Wheat Bread
Bacon
Shredded Cheddar Cheese
Eggs
Butter Maple Syrup
Salt & Pepper

Directions:

Pre-heat oven to 400 degrees.
While the oven is preheating partially cook the bacon for about 3-5 minutes in a large skillet set to medium-high. You want the bacon to be a little cooked but still pliable.

Mix maple syrup and butter in a small sauce pan and heat over medium low so butter melts (you can’t mess this up so don’t worry about amounts too much. I usually use ½ a stick of butter and a cup or so of syrup).

Using a cookie cutter, ravioli cutter, or whatever else you may have that can cut a 3 inch diameter circle—cut circles out of the bread slices. Here comes the good part!

Grease/non-stick spray muffin pan and line with bacon so that is circles each mold.

Now, brush each side of the bread with the syrup/butter mixture and place in cup so that it rests evenly at the bottom of the mold.

You may have to do a little trimming of the bread but it’s ok if it doesn't fit perfectly either.

Crack an egg into each mold, season with salt and pepper and give each cup a sprinkle of cheese (you can also add the cheese on top of bread, beneath the egg).

Buttermilk Pancakes Recipe

Ingredients:
2 eggs
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
4 tablespoons butter
½ teaspoons vanilla extract
oil or cooking spray (for cooking)

Cooking Instructions:

Step 1: In a large bowl beat eggs. Add buttermilk, butter and vanilla and mix well. Add flour, sugar, baking powder,
baking soda, and salt. Mix well until smooth and let batter set for a few minutes.

Step 2: Heat griddle or pan over medium heat. Brush lightly with oil or spray with cooking spray.
You can test to see if the pan is hot enough by adding a few drops of water, if  or when the drops start to dance its hot enough.

Step 3: Pour ¼ cup of batter onto the griddle. Cook on the first side until bubbles that form start to pop.
You can also gently lift up the pancake to make sure the bottom is not overcooking,
if it is the pan may be too hot and you will need to adjust the heat.
Flip the pancake over with a spatula and cook until golden brown. Repeat until all the batter is gone.
  • Just Add Some Small Cut Up Strawberries or Some Whole Fresh Blueberries to Your Recipe and Yummy!!!
  • Strawberry Sauce is Just Cut Up Strawberries with Some Sugar Added 1 Tablespoon or 2 of Water and Stirred Until The Sugar Melts Then Just Pour It Over Your Pancakes,,,,,Even Better!
