There is nothing I love more than an easy breakfast recipe. Mornings aren’t always my strong suit, but as a mom, I love a great make-ahead breakfast recipe. That is why I love breakfast casserole recipes that are big enough to feed everyone and quick to put together. This breakfast burrito casserole is definitely my new favorite casserole, and I have been making it all the time. It combines my love for Tex-Mex food with my love for easy breakfast casseroles! Made with sausage, hashbrowns, eggs, tortillas, and plenty of cheese, you will go crazy for this easy breakfast idea. An easy breakfast burrito casserole made with six simple ingredients that your entire family will love. It is cheesy, savory and the perfect way to start your morning off right.

Ingredients
▢1 16 ounce roll breakfast sausage – crumbled and cooked
▢1 20-oz package diced hash browns – (thawed if frozen)
▢2 cups shredded cheddar cheese
▢6 eggs
▢2 cups half-and-half
▢10 flour tortillas
▢½ teaspoon salt
▢½ teaspoon pepper
Instructions
Gather your ingredients. Preheat oven to 350ºF. Spray a 9×13-inch casserole dish with cooking spray.
Mix sausage, hash browns, and 1 cup of cheddar cheese. Divide the meat, potato, and cheese mixture between tortillas. Roll up each tortilla and place seam side down in the baking dish.
In a bowl, whisk together egg and half-and-half. Pour over tortillas.
Add the remaining 1 cup cheese over top of the egg mixture and cover with foil.
Bake covered for 35-40 minutes. Remove the foil and bake for 5 – 10 more minutes until the cheese has melted. Remove from the oven and allow to sit for 5-10 minutes before serving.
Notes
I like to use breakfast sausage in this recipe, but crumbled, cooked bacon will also be delicious.
Add taco seasoning to your breakfast sausage as it cooks in the skillet. This will add a delicious Tex-Mex flair to your breakfast burritos. Top the whole meal with fresh black bean and corn salsa for an even more authentic meal.
You can easily cut this recipe in half to make five burritos for breakfast for the family. When you make a smaller quantity, use an 8×8 baking dish so that the burritos still cook evenly without getting too crispy.
